1 1/2 cups oatmeal (safe a few tablespoons or more for the work surface)
1/2 cup peanut butter
1 ripe banana
Instructions:
Preheat your oven to 180° Celsius or 350° Fahrenheit .
Blend the oatmeal into a fine powder.
Blend peanut butter and banana in a food processor, until smooth. Then add the oatmeal flour and mix again. The dough should not be sticky when you’re done.
Sprinkle your work surface and the top of the dough with the reserved oatmeal flour and roll out, roughly 0,5 cm thick.Then cut out the cookies with a cookie cutter. Once done, poke holes in the middle of each cookie using a fork.
Bake for 15 minutes. I would recommend checking them at 10-12 minutes so they don’t get to dark. You want them dry and lightly golden. Enjoy!
